Imbibis Craft Distillery is proudly flying the flag for Queensland’s distilling industry at Queensland Parliament, showcasing Ipswich-made spirits that celebrate regional Queensland in every glass.
Founded in 2019 by master distiller Jason Hannay, Imbibis has earned a reputation for creating spirits that capture the flavour, character and ingenuity of Ipswich. At the heart of Imbibis is a commitment to crafting small-batch spirits from local ingredients. From grapes grown in the Scenic Rim to honey and botanicals sourced from local Ipswich producers, each creation is a testament to collaboration, craftsmanship, and community.
What does ‘Imbibis’ mean?
Founders Jason and Maree love to imbibe, but with that name already taken, they created a unique twist to reflect their ethos. Imbibis (im-bye-biss) comes from Latin and is related to the verb imbibe in the form used when speaking to one person about something happening now.
To imbibe is to drink, absorb, assimilate or take in an idea, perfectly capturing the experience they want every Imbibis spirit to offer.
Where Heritage Meets Handcrafted
While Ipswich may be best known for its rail heritage, it’s also home to something truly unique. Imbibis Craft Distillery is the region’s only distillery open to the public. From their Bundamba base, founders Jason and Maree Hannay are proud to create products to enjoy with friends, good food, and good conversation.
Their Shiraz Brandy, crafted from Southeast Queensland wine, showcases the art of patient ageing and refinement. Deep, rich, and full-bodied, it recently earned silver at the London Spirits Awards 2025, celebrated for its elegance, warmth, and unmistakable regional character.
Imbibis has also made history with its Licor de Agave, Ipswich’s first locally distilled agave spirit, a Queensland take on tequila. Fermented, distilled, and bottled entirely on site, it delivers smooth, earthy, and spicy notes with a hint of native citrus. The perfect blend of authenticity and innovation. Awarded bronze at the Melbourne International Spirits Awards 2025, this spirit marks another proud milestone for the family-run distillery.

In partnership with the Queensland Distillers Association, and with the support of the Speaker of the Legislative Assembly, Mr Pat Weir MP, Lucinda Bar and Strangers’ Restaurant now feature a spirit list focused on Queensland-made products.
This focus on local producers underscores Queensland Parliament’s ongoing commitment to championing local industry. From seaside towns to regional heartlands, each distiller adds its own character and flavour to the experience.
