For 90 days, our 150-day grain-fed Diamantina Black Angus SB3 rib eye has been carefully aged and encased in kumquat-infused tallow, developing an intense depth of flavour and remarkable tenderness. The kumquats, grown in the Parliamentary gardens, add a distinctly local touch to this unique dining experience.

Now, it’s ready to make its very limited appearance at Strangers’ Restaurant.

Designed to be shared by two, the 400g steak will be presented and carved tableside by our Executive Chef, before being served with a pickled walnut emulsion, chimichurri and a rich beef jus.

The complete experience is $190 in total for two guests and includes your choice of two sides:

  • Spring salad with fennel, alfalfa and miso ginger dressing
  • Floral-glazed courgettes with shallot cream and herb salad
  • Fries with rosemary salt
  • Pomme purée

Our recommendation? The floral-glazed courgettes and pomme purée. You won’t be disappointed.

Make it an occasion. Pair your steak with a bottle of Penfolds Grange from our cellar, or explore our carefully curated wine selection to find the perfect match.

Additional courses can also be added to create a more extensive dining experience.

Only a small number of portions will be available, reserved for those who seek out truly distinctive dining experiences.

Available from Thursday 15 October, only while this very limited release lasts.
