A vision shaped by passion
Witches Falls Winery was founded in 2003 with a clear purpose to craft wines that people genuinely enjoy. Behind this vision is winemaker Jon Heslop, whose journey into winemaking spans continents and decades.
From early travels through Europe to hands-on experience in the Barossa Valley, Hunter Valley, Burgundy and Napa Valley, Jon developed a deep respect for both traditional techniques and new ideas. His focus has always been on creating wines with personality that reflect both the land and the winemaking process.
That vision found its home on Tamborine Mountain.
A unique approach to Queensland wine
Witches Falls has become one of Queensland’s largest wine producers, known for its balance of innovation, attention to detail and minimal intervention winemaking.
Producing all wines on site, using fruit sourced from Queensland’s Granite Belt and South Australia’s Riverland, allows close control over every stage of the process. This approach ensures consistency while still leaving room for creativity. The result is a collection of wines that are expressive, individual and reflective of their origins.
The art of wild fermentation
A defining feature of Witches Falls wines is their use of wild fermentation.
Rather than introducing commercial yeast, wild fermentation relies on the natural yeasts present on the grape skins and in the winery environment. This slower, less controlled process creates wines with greater complexity, texture and depth.
Each batch develops its own subtle characteristics, influenced by the vineyard, the season and the surrounding environment. The result is a more nuanced wine that tells a story in every glass.
This approach reflects the winery’s philosophy of minimal intervention. The winemaker guides the process, but allows nature to play a leading role.
